Salmon Nuggets

You know I don’t know the best way to write out a recipe so I usually just go straight and to the point.

These were the actual greatest salmon bites I have ever made and I am so excited to have them on repeat.

So here we go.

Ingredients:

  • 1-2 lbs fresh salmon (skin removed)

  • 3/4c panko bread crumbs

  • 1/2 cup flour

  • 1/4 cup hemp seeds

  • 2 eggs

  • salt, pepper, garlic

I served this over rice with cukes and shredded carrots and a little sweet chili sauce but I saw a recipe that was similar that served with a greek yogurt, lemon, dill dip that would also be amazing so you pick!

Directions:

  • Preheat the oven to 350

  • If salmon has skin, remove

  • Use kitchen scissors to cut into square chunks

  • In one bowl mix breadcrumbs and hemp seeds (adds extra nutrients!)

  • In a separate bowl have your eggs

  • One more bowl has your flour

  • Coat salmon first in flour, then beaten eggs then breadcrumb mixture

  • Align on a tray and bake for about 20-25 mins

  • THEN add to a pan with hot oil and brown on each side

They were a huge hit!
