Salmon Nuggets
You know I don’t know the best way to write out a recipe so I usually just go straight and to the point.
These were the actual greatest salmon bites I have ever made and I am so excited to have them on repeat.
So here we go.
Ingredients:
1-2 lbs fresh salmon (skin removed)
3/4c panko bread crumbs
1/2 cup flour
1/4 cup hemp seeds
2 eggs
salt, pepper, garlic
I served this over rice with cukes and shredded carrots and a little sweet chili sauce but I saw a recipe that was similar that served with a greek yogurt, lemon, dill dip that would also be amazing so you pick!
Directions:
Preheat the oven to 350
If salmon has skin, remove
Use kitchen scissors to cut into square chunks
In one bowl mix breadcrumbs and hemp seeds (adds extra nutrients!)
In a separate bowl have your eggs
One more bowl has your flour
Coat salmon first in flour, then beaten eggs then breadcrumb mixture
Align on a tray and bake for about 20-25 mins
THEN add to a pan with hot oil and brown on each side
food photography is not my thing but this is so you can see pre baked!
They were a huge hit!
