Veggie Packed Pasta Bake

I hate when recipes are hidden within long blog posts so I am going to cut right to the chase.

This recipe is high protein, high fiber and I literally just made it at 9am when my little guy went to a mud class with his babysitter (thank you Hannah!). Point is, it is simple, it is delicious and packs veggies, protein and carbs plus a ton of flavor all in one.

This will feed a family, offer leftovers and hopefully due to the cheese and pasta - will make some littles happy too!

PS - you can customize this recipe to fit your needs best, change up the veggies or types of pasta! Even change the sauce if you want.

For example - swap out the mushrooms and add broccoli, swap out the marinara for the seasonal Trader Joe’s autumn sauce?! You get the idea!
